Our cups are filled with the wafer-thin, easy-to-melt chocolate that we use for our sampling station at farmers markets and craft fairs. They’re very versatile. In addition to snacking and sharing, they can be used to elevate your appetizer, cookie, cake, pastry, and drinking chocolate recipes!

Cacao:   Kokoa Kamili
Origin:  Tanzania
Ethically sourced cocoa from the Kilombero Valley in the heart of Tanzania.
Kokoa Kamili currently works with about 1,500 small shareholder farmers, most of whom farm between 0.5-2 acres of cocoa, and pays above market prices for the cacao they grow, promoting the growth of the Tanzanian cacao industry. The cooperative manages the fermentation and drying process, which reduces the farmers’ workload while producing a consistently higher quality cacao bean for chocolate. Good for farmers, and good for chocolate!

 

Coffee:   Red 5 de Diciembre
Origin:  Mexico
Red 5 de Diciembre was founded in the Oaxaca region of Mexico to combat agricultural diseases by returning to its indigenous Mazatec farming roots. They work with 1,420 smallholder farmers who grow their coffee in some of the most remote mountainous regions in all of Mexico. The farmers are paid above fair market price for their selectively harvested coffee cherries.

 

Sugar:   Natíve Green Cane Project
Origin:  Brazil
Sustainably Sourced, Organic, non-GMO.
The Green Cane Project, launched in 1987, is the largest sustainable agriculture project in the world and has pioneered green cane harvesting, replacing the destructive practice of burning cane fields. They also replaced synthetic fertilizers and pesticides with natural ones, planted over 1,000,000 trees to create 11,000 acres of biodiversity islands on its 54,000 acres of farmland that attract beneficial wildlife, installed co-generation equipment to power the mill and surrounding communities, saving over 25,000 metric tons of CO2, and implemented many innovative environmental and social programs.

 

 

Milk Powder:   Alexandre Family Farm A2 / A2 Milk
Origin:  Northern California

The Alexandre family lives in harmony with nature instead of working against it. In addition to their specially bred cows who produce easy-to-digest organic A2/A2 milk, hogs, chickens, and beehives, the Alexandres take care of the surrounding wetlands and riparian zones and any and all wildlife who migrate through their land or choose to live there. Aleutian Canada Geese, Bald Eagles, Roosevelt Elk are notable species they’ve helped protect. 

 

Cocoa Butter
Origin:  Dominican Republic
Organic, Kosher
Like many craft chocolate makers, we sometimes need to add extra cocoa butter to our recipes to give them a smoother texture and keep our equipment from jamming up. Making good cocoa butter requires specialized equipment that separates the cocoa butter from the cocoa powder, so we don’t make it onsite. Chocolate Alchemy, a family business run by John Nanci, one of the founders of the American Craft Chocolate Movement who only purchases ingredients that are Fair Trade or better, is our current supplier of cocoa butter. His cocoa butter, from the Dominican Republic, is deodorized to make our cacao the star of our recipes.
